Fontana Candida 1998 Frascati ($8ish). Frascati is more than a wine, it’s a state of mind. I first sipped this light Italian white wine at a sidewalk cafe in Rome. For me, a bottle of Frascati has that Calgon-take-me-away effect. This weekend, I took myself away with my favorite Fontana Candida, grilled salmon, white bean and roasted garlic puree, and sautéed spinach. The only thing missing was a convoy of beautiful, Italian boys scootering past my table. “Frascati, take me away!” (Weekend Wine, 05/00)
