Nibble: Cochon’s Abita Beer Whole Grain Mustard
I love mustard, so when a jar of this new concoction from New Orlean’s Cochon restaurant and chefs Donald Link and Stephen Stryjewski showed up one day, I was eager to give it a test drive.
And now I am obsessed with the mellow but flavorful character of this unique mustard — not to mention the tapioca-pearl-like crunch of the whole mustard seeds. It’s delicious but not burning, which makes it compliment but not overwhelm whatever you dollop it on.
It was the perfect spark of flavor and acidity on a roasted turkey breast & avocado sandwich, and I can see it working with any kind of meats — roast beef, pork tenderloin, roasted chicken — not to mention burgers and hot dogs. If I cannot actually beat Cochon, nibbling various pork parts and other goodies (ooh, I just remembered the fried chicken liver starter…) and sipping an Abita beer, then I’ll have to content myself with this taste of Cochon at home.
