Recipe: Garlic & Herb Roast Pork Loin

This couldn’t be easier — and turns out a juicy flavorful roast every time. Feel free to play fast and loose with the herbs you use. Herbes de Provence is my spicerack savior — I turn to it anytime I want a wonderful, sweet herbiness. But you could use fresh or dried rosemary, thyme, sage… Leftovers make terrific sandwiches!
Recipe: Garlic & Herb Roast Pork Loin
Serves 8
4 large garlic cloves, pressed
2 teaspoons Herbes de Provence
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2-3 pound boneless pork loin roast
Preheat oven to 400F. Mix first 4 ingredients in small bowl and rub mixture all over pork. Place pork in a small-ish roasting pan or foil-lined pan, fattier side up, and roast 30 minutes. Turn pork over and roast another 25-50 minutes (will vary considerably by size of roast) until thermometer inserted into center of roast registers 155F. Remove from oven and let rest 10 minutes before slicing. Serve with pan juices drizzled over.
