Pairing: Citrus Ginger Chicken Skewers with Viognier

Here’s a flavorful starter that sure to shake off the winter chill with vibrant citrus, soy sauce and fresh ginger. Paired with an aromatic white wine like Viognier, it’s a great way to kick off a casual dinner. (Kids like these, too!)
Recipe: Hors d’oeuvres: Citrus Ginger Chicken Skewers
Serves 4-6 as an appetizer
2 pounds chicken tenders
Zest of 2 oranges
Juice of 2 oranges
8 cloves garlic, minced
¼ cup soy sauce
1 tablespoon honey
1 tablespoon grated fresh ginger
1½ teaspoons kosher salt
½ teaspoon freshly ground black pepper
6″ wooden skewers, soaked in water for 30 minutes and patted dry
Preheat oven to 400F.
In a large bowl, combine all ingredients except chicken tenders; mix well.
Cut tenders, against the grain, into approximate 3×1″ strips. Add to bowl and toss to coat thoroughly.
Thread chicken strips on wooden skewers and arrange in a single layer on two baking sheets. Spoon about half the orange mixture over the wings and bake for 12 minutes. Turn skewers and baste with remaining orange mixture. Cook an additional 10-12 minutes, or until just done.
