Recipe: No-bake Chocolate Peanut Butter Squares

Honestly, I’m not that much of a Halloween candy person — unless you’re talking about any variation on peanut butter and chocolate. And then, you better keep your eye on me. Entire bags of Reese’s Peanut Butter Cups have been known to mysteriously disappear when I’m around…
If you’re on my team on this, then try this Halloween-friendly treat. Homemade peanut butter and chocolate goodies are a snap to make. I’m not saying they’re good for you, but they sure are tasty!
Recipe: Desserts: Cookies & Candies: No-bake Chocolate Peanut Butter Squares
40-60 squares, adapted from The Silver Palate Cookbook
¾ cup brown sugar
1 pound powdered sugar
8 tablespoons plus 1 tablespoon unsalted butter, softened
2 cups smooth peanut butter
1 cup lightly salted peanuts
12 ounces semisweet chocolate chips
Mix sugars, 8 tablespoons butter, peanut butter and peanuts together. Pan into an ungreased jellyroll pan (15×10″). Flatten top with a rolling pin.
Melt chocolate and remaining tablespoon butter in the top of a double boiler over simmering water. When melted, spread over peanut butter mixture in pan.
Cut into 50 or so bite-size squares. Chill for at least 20 minutes. Remove to serving platter. Serve chilled.
