    peace-mealsMy mother gave me this cookbook just before Thanksgiving, and I happily tested my way through it for much of November and December.

    There’s lots to explore here — from decadent Creme Brulee French Toast, to Spicy Rosemary Cashews, Beet and Blood Orange Salad, Cranberry Salsa with Warm Brie and Pistachios (gorgeous as well as tasty!), Pizza with Pear, Arugula and Truffle Oil, Blackberry Shortbread Bars, the list goes on…

    But my very favorite thing was the recipe for Soft Ginger Cookies.

    img_0312copyPerfect in their simplicity, these reminded me of the sugar cookies or peanut butter cookies I used to make with my mom as a kid. Just a simple dough, shaped into small balls and rolled in sugar. Then a quick 10 minute bake, and out comes a perfectly tender cookie with loads of molasses and spice flavor. They were great hot out of the oven and also kept well for a week or even two weeks. I’ll be making these again every year — if not more often!
