Pairing: Filo with Gorgonzola Dolce and Honey & Leftover Bubbly!
If you have any bottles of bubbly leftover from New Year’s, here’s an easy pairing. These filo bites are a snap to put together and work equally well pre- or post-meal.
Recipe: Hors d’oeuvres: Filo Bites with Gorgonzola Dolce & Honey
1 package frozen filo cups
4-6 oz. Gorgonzola dolce (or other young, mild, creamy blue cheese)
Sardinian bitter honey (miele amaro) or wildflower honey
sliced almonds, lightly toasted
Bake filo cups according to package instructions. While filo cups are still warm, place a small knob of cheese in each cup. Drizzle rather generously with honey and scatter toasted almonds over all.
Wine Pairing: Bubbly! These are a particularly good choice for off-dry bubbles like Moscato d’Asti, but any bubbly will do just fine.
